Since we are nearing the year end, I thought it would be a good idea to introduce you to year end traditions of Japan. I will be introducing one new tradition everyday for the next few days.
ToshiKoshi Soba is a traditional steaming hot noodle bowl eaten on 31st December. The buckwheat plant can survive in extreme weather conditions, which is why these noodles represent resilience and strength.
These noodles are easy to cut while eating and hence, they also represent melting away of hardships of the past year and good wishes for the times ahead.
